Sweet Potato & Salmon Quiche

My quiche recipe with sweet potato and salmon is a meal the whole family will love. An easy lunch option, quiches are healthy, filling and rich in Omega-3, which is essential for growing babies and children.

Ingredients

  • 1 cup roasted sweet potato, cut into bite-sized pieces
  • 1 cup salmon, mashed
  • 4 eggs
  • 1 ½ cups milk
  • ½ cup self-rising flour
  • 1 ½ cups milk
  • ½ cup self-rising flour
  • ½ cup cheese, grated
  • 1 tbsp. butter, melted

Method

  1. Preheat oven to 180°C.
  2. Whisk together eggs, milk, flour and melted butter in a medium bowl.
  3. Fold in roasted sweet potato and mashed salmon into the egg mixture.
  4. Pour mixture into an ovenproof dish or casserole tin and sprinkle top with grated cheese.
  5. Bake for 45-50 minutes until golden brown in colour.
