Susie Burrell’s Kids’ Vegetable Poke Bowl

Not only do they look colourful and fun, but my Vegetable Poke Bowls are full of important vitamins, minerals and fibre. And, you can include children in the meal prep process of creating the bowl.
- ½ cup brown rice, cooked
- ½ cup corn, cooked
- ½ cup cucumber, chopped
- ½ cup carrot, grated
- 5 baby tomatoes, halved
- 1 tsp. soy sauce
- Cook the rice according to packet directions. Cook the corn by boiling on the stove, or steaming in the microwave.
- Rinse and prepare all vegetables.
- Then, place the cooked rice into a bowl—and, with the kid’s help, place toppings on decoratively.
- Drizzle with soy sauce and enjoy straight away!
